Fudgy Peanut Butter Pruffins

Who doesn’t love the classic combination of chocolate and peanut butter? These muffins have almost an identical amount of carbohydrates and protein to keep those macros in check.


Fudgy Peanut Butter Pruffins
  • 2 scoops Muscle Gauge Nutrition Pure Whey Isolate- Rocky Road flavor
  • 6 Tbsp unsweetened cocoa powder
  • 1 cup oat flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 container nonfat vanilla Greek yogurt (5.3 oz size)
  • 12 tbsp liquid egg whites
  • 1 tsp vanilla extract
  • 1/2 cup almond milk (or skim, or whatever you may like)

Cooking Instructions

PB to be swirled into the muffins (prep in a separate bowl);

5 Tbsp PB2 or other powdered peanut butter Mix in a bowl with enough warm water until a pate-like/peanut buttery consistency

Mix dry muffin ingredients thoroughly Add the wet (muffin) ingredients to the dry mixture until you get thick batter consistency.

Pour batter into 12 cupcake spots on a lined cupcake or sprayed baking tray Put a dollop of the PB2 in the middle of the muffins. Swirl around with a knife tip or toothpick until marbleized Bake at 350 degrees ~12-15 minutes or until a toothpick comes out clean. ENJOY!
