When life gives you lemons…make these. Moist zesty muffins are the perfect way to brighten up a breakfast or brunch. It’s like eating little healthy protein pound cakes



Ingredients

Lemon Poppy Seed Muffins
  • 1 scoop Muscle Gauge Nutrition <a title=" />Pure Whey Isolate- Cake Batter flavor
  • 6 Tbsp Unsweetened Applesauce
  • 2 packets of Stevia
  • 3 Tbsp liquid egg whites 1.5 Tbsp Coconut Oil
  • 2/3 Cup Coconut Flour
  • 1 Tbsp Poppy Seeds
  • 1 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/2 Cup Chobani Greek Plain Yogurt
  • 3 Tbsp Lemon Juice
  • Zest of 1 lemon (optional)

Cooking Instructions

Mix EVERYTHING together until you get thick, batter consistency.

Pour batter into a sprayed or nonstick muffins tins or lined tin spots

Bake for 25 minutes at 325° or until a toothpick comes out clean
