Lemon Poppy Seed Muffins
When life gives you lemons…make these. Moist zesty muffins are the perfect way to brighten up a breakfast or brunch. It’s like eating little healthy protein pound cakes
Ingredients

- 1 scoop Muscle Gauge Nutrition <a title=" />Pure Whey Isolate- Cake Batter flavor
- 6 Tbsp Unsweetened Applesauce
- 2 packets of Stevia
- 3 Tbsp liquid egg whites 1.5 Tbsp Coconut Oil
- 2/3 Cup Coconut Flour
- 1 Tbsp Poppy Seeds
- 1 tsp Baking Powder
- 1/4 tsp Baking Soda
- 1/2 Cup Chobani Greek Plain Yogurt
- 3 Tbsp Lemon Juice
- Zest of 1 lemon (optional)
Cooking Instructions
Mix EVERYTHING together until you get thick, batter consistency.
Pour batter into a sprayed or nonstick muffins tins or lined tin spots
Bake for 25 minutes at 325° or until a toothpick comes out clean
